A North London Christmas – More festive treat from XUK camps

Here in the camp office we love cooking and wanted to share with you another great recipe for you to make. The children will love these delicious chocolate treats.

To make these you will need:

  • 200g of digestive biscuits
  • 100g of unsalted butter
  • 2 tablespoons of desiccated coconut (optional)
  • 125g of unsalted butter (extra)
  • 1 tin of sweetened condensed milk
  • 90g of caster sugar
  • 3 tablespoons of golden syrup
  • 250g of chocolate
  • 2 teaspoons of oil

  • Stage one - Grease a shallow tin and line the base with baking paper.
  • Stage two - Crush the digestive biscuits in a bowl using a rolling pin until they are in fine pieces.
  • Stage three - Melt the 100g of butter and pour into the bowl of biscuits. Add the coconut and stir well. Once the crushed biscuits are moist, press into the lined tin.
  • Stage four - Put the 125g of unsalted butter, condensed milk, caster sugar and golden syrup into a saucepan and heat on a low heat for about 15 minutes. Remember to keep stirring so you do not burn the mixture. You need to stir until the sugar has dissolved and the mixture is thick, smooth and lightly coloured.
  • Stage five - After 15 minutes remove the saucepan from the heat and to leave it to cool. Once cooled for 5-10 minutes poor over the biscuit base, making sure entire base is covered.
  • Stage six – Put the baking tin in the fridge for 30 minutes until it is firm.
  • Stage seven - Melt the chocolate either in the microwave or in a bowl over a saucepan of hot water and add the oil until smooth and pour the chocolate over the caramel.
  • Stage eight – Put into the fridge to allow the chocolate to harden. Once chocolate appears to be firm, remove from the fridge and cut into small pieces.
